Smoked Pork Loin with asparagus and roasted fingerling potatoes with apples
Ingredients
2.25 lb pork loin
Marinade
Make sure loin is thawed
Use the following: Amount will vary.
Black pepper to coat both sides
Season salt/blend of choice to coat both sides
Thyme to coat both sides
Honey to coat both sides
Let marinate 2-4 hours in refrigerator
Smoke: set smoker to 225 degrees
Smoke loin for 2.5 to 3 hours or until internal temp is 145* Fahrenheit.
Halve 3/4 lb fingerling potatoes
Cube 1 Fuji apple
Chop 1/4 cup of onion
Crust 2 clove garlic
Mix
Place in 13x9 baking dish with olive oil so they don't stick
Top with salt, pepper and herbs to taste
Roast in oven at 400 degrees for 35-35 minutes
Asparagus
Bring pan on stove top to medium heat
Bring a tablespoon olive oil to medium
Add asparagus
Cook for approximately 4 minutes
Dash with balsamic vinegar (be careful it will splatter)
Cook for one minute
Turn off heat
Top with shredded parmesan cheese
